Creamy Chicken Soup For The Soul. RECIPE :)

Image
Time: 11:13 am Feeling: Cold Over the weekend, I made some creamy chicken soup for myself and my brother. When I was in Uni, it was something I always made, because it's super easy to make. However, there were two things I didn't like in all the soups I made: they were always so flipping thick, and there were always surprises (lumps). This time around, I did things differently. I made use of some: Leftover chicken bbq, 10 green beans 2 sausages 5 small carrots 2 eggs (whites) 2 and a half tablespoons of flour 1 garlic clove 1 onion. 1 tablespoon of margarine. Salt. Thyme 2 Seasoning cubes. Some evaporated milk Pretty basic ingredients. I know, right? So, first things first: Shred your chicken. Slice your sausages into circles, they shouldn't be cut so thinly. Wash your carrots and slice into thick circles. Boil your carrots for 5-6 minutes. I boiled my carrots and eggs in the same pot. When the carrots were just right; somewhere in be...

Healthy Lunch or Junk? Meal Prep For Work.

Image
Time: 9:36 am Feeling: Full and sleepy I'm at work. Just had breakfast, and I feel soo full and sleepy. I wonder if I'll be able to eat lunch. Yeah, I brought lunch to work, and that's what I actually want to talk about. Source: Pinterest If you know me, one thing you should know is that I'm big on saving money and cutting down on unnecessary expenditure as much as I can. Lol, but as much as I do this, I like to enjoy myself once in a while; I just go "Lois, just spend this money, na one life". When I started working, in 2017, I found out that I did not like buying junk for lunch, for two major reasons: It was very unsatisfying, gosh! I'm not a big eater at all, I usually eat small helpings of food, but this just didn't cut it. It was usually a drink and biscuits and some candy. It was really expensive! It didn't seem like it, but it was! For something that's absolutely not filling. I eventually decided to try to take lunc...

Blank spaces and weird meals.

Image
Feeling: sleepy Time: 11:49am On some days, days like this one, I have no inspiration to write. Like, my head feels like a blank space. Tehehehe, reminds me of Taylor Swift's song, Blank space. I just thought now, that a reason for this could be that I'm always cooped up in one place. It's most likely the only reason. I don't have friends here, sucks much. Would have suggested going out. I like forming hard girl, but sometimes I'm bothered about it. What do you do when you have zero inspiration?  I could learn a thing or two  from you. Thank you. By the very way, I had an inspiration to try out a random food combination; sweet potatoes and ogbono (mixed with okra) soup. What weird / strange meals have you tried out lately Much love,  Fifi.

The simplest Banana bread recipe ever!

Image
Feeling: Content Time: Started yesterday, ended today. I really think banana cake should be called ... I really think banana bread should be called banana cake or something like that. It's way way easier than the regular bread that requires about an hour of proving in total and proper kneading. I had been wanting to try this out for quite a while now, and I eventually tried it out yesterday and it was perrfeeccttt. My siblings loved it so much. Side note: my first brother, thinks I'm the most adventurous with food, probably after my dad.  Means a lot tehehe. Sister wanted that title though. Okay, this banana bread requires very few ingredients: 3 ripe Bananas 1 1/2 cups of flour 2 Eggs 2 tablespoons of melted margarine 1 teaspoon of Baking powder A pinch of Salt 7 tablespoons of Sugar (up to you, really) Directions. In a bowl, mash three ripe Bananas with a fork, till it's pulpy. In another bowl combine flour, baking powder, salt and sugar and mix....

Some Kinna delicious sweet potato meal. RECIPE!

Image
Feeling: cuddly  Time: 7:57am The last time I made this, my brother called it Fifi's casserole (well, that's cos I made it in the oven). Now that I made it in a pan, I wonder what he'd call it.   I feel like this meal had already existed before I thought about it; like I wasn't the first to think it up, well, that's okay I guess. The first time I made this was during my service year, I was super tired of eating the same old meals and I felt like whipping up something new. That's one thing about me; I think about things I've never eaten before, make them a reality; sometimes, good, sometimes, not so good. (I made some kind of toast in a pan the other day, I had it with ketchup. Yeah, bread and ketchup. My brothers were sneering at it, I told them they had to taste it, they did, and made a whole batch for themselves.) So let me show you how I made this quick, super easy and delicious food. It probably takes 40 minutes or less than. Peeling the pota...

On being a foodie. Plus a recipe

Feeling : Bland (I'll explain in another post)  Time: 5:27p.m (EAT)  There's a different topic that's coming into my head, but I'll write that later. I guess I should just stick with this one. I like food. I like cooking. I like good food. I don't like repetition when it comes to food. (mom doesn't mind us eating swallows everyday). I'm not the greatest fan of eateries. Not to say I'm a glutton or anything. I eat small portions of food. I like to think outside the box when I think about food. I like being creative, I like cooking for people and seeing the look of satisfaction on their faces. The kitchen is my favorite part of any house asides my room.  (By God's grace, when I'm married I'll have a really really beautiful kitchen.) I don't cook super nicely all the time. I make mistakes. The other day I made oily cookies, human said it looked like akara (I'm still going to revenge). Also I made akara; one batch was sa...
